Khoresh Bademjan is a traditional Persian dish made up of delicious ingredients such as eggplant, lamb and turmeric. Substitute with beef in the case you don’t have lamb meat available for the stew. Serve the Khoresh Bademjan on top of white rice. Preparation and cooking of the dish takes approximately one hour. The Khoresh Bademjan could also be prepared in a slow cooker for an easy meal.
- 2 large eggplants
- Olive oil
- Kosher salt
- 1 pound. lamb meat
- Salt
- Pepper
- 3 tablespoon chopped onions
- 1 teapsoon turmeric
- 2 tablespoon lemon juice
- 3 cups water
- 1 tablespoon tomato paste
- 2 cloves garlic
- 1/2 teaspoon cinnamon
Eggplant Preparation
Begin preparation of the stew by cutting the eggplant into quarters.
- Slice the quarters of the eggplant into approximately 1/2-inch pieces.
- Sprinkle the eggplants with kosher salt on both sides.
- Set the eggplants on a tray and allow to sit out for a minimum of 10 minutes to get rid of any bitter taste.
- Rinse the eggplant thoroughly to get rid of the salt and fry the eggplant slices in a pan.
- Preheat a frying pan with oil over medium heat on your range top.
- Place each slice in the pan and fry until the eggplant has a golden brown color.
- Remove the eggplant from the heat and set on paper towels to absorb excess oil.
The eggplant is now ready for use in the Kroresh Bademjan.
Lamb Meat
After finishing your prep with the eggplant, brown the lamb meat and onion in a sauté pan.
- Use approximately a pound of meat and three tablespoons of chopped onions.
- Drizzle olive oil over the ingredients and cook over medium heat.
- Add one teaspoon of turmeric, 1/2 teaspoon of cinnamon and two minced cloves of garlic during cooking.
- Season the dish with salt and pepper to taste.
Finishing Touches
When making the stew, you add more and more ingredients to one pot.
- Add one tablespoon of tomato paste, two tablespoons of lemon juice, eggplant and three cups of water to the sauté pan.
- Cover the stew ingredients and allow to simmer until the lamb is tender. It may take up to 30 minutes before the stew is ready.
- Remove the Khoresh Bademjan from the heat and serve immediately.
Substitutions
Some substitutions and additional ingredients to add to your Khoresh Bademjan include using lime juice instead of lemon juice, putting dry peas into the stew when you add the tomato paste and adding chopped tomatoes or stewed tomatoes instead of the tomato paste.
